I wish y’all could smell this cake. I was looking for something easy to make for fellowship. Everything I found to make, I was missing an ingredient until I came across this Pumpkin cake with yellow cake mix. Now, I am not one for mixes but in a crunch, you betta believe I will. The recipe is from Like Mother Like Daughter and it is out of this world delicious. Everyone that was my guinea pig, loved it.
- 1 box yellow cake mix
- 1/4 cup white sugar
- 1/2 cup oil
- 1/4 cup water
- 4 large eggs
- 15 oz pumpkin puree (not pumpkin pie filling)
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- Preheat the oven to 350 degrees.
- Mix together the cake mix, sugar, oil, water, eggs, pumpkin puree, pumpkin spice, and cinnamon.
- Stir for 2 minutes until the batter is super smooth.
- Pour the batter into a greased cake pan and bake until a toothpick comes out mostly clean.
- For a 9×13 pan, bake for 25-30 minutes
- For a 10inch bundt cake, bake for 30-40 minutes
- Allow the cake to cool for 10 minutes then remove from the pan to a cooling rack to cool completely.
- Top with powdered sugar, vanilla icing, or cream cheese frosting.
